My biggest downfall are cupcakes and muffins. I love them! These great little muffins are packed full of fiber and contain no refined sweeteners.
Sugar-Free Grain Muffins
1 cup mixed-grain cereal
2 cups boiling water
1 1/2 cups all-purpose flour
1 tbsp. baking powder
4 tbsp. honey
Pinch of salt
1 lightly beaten egg
1/3 cup safflower oil
In a medium bowl, mix the cereal and water. Set aside for 20 minutes for the grains to swell.
Preheat the oven to 400 F. Grease a 12-cup muffin pan. In a medium bowl sift the flour and baking powder.
In a large bowl, beat the honey, salt, egg and oil. Slowly add the flour and the cereal and mix well.
Spoon the mixture into the prepared pan. Bake in the oven for 20 minutes. Remove pan from the oven and cool for 5 minutes. Then remove the muffins and cool on a rack.
