Snap Pea, Cucumber Avocado

It might seem obvious, but the
combination of arugula, snap peas (a basket or so), a few Persian cucumbers
and an avocado is delicious. I toss the arugula with vinaigrette first and then
place the other items on top before drizzling a little dressing on the top. This
way, the goodies don’t slip to the bottom of the bowl.
The vinaigrette I make
is with olive oil, champagne vinaigrette, dijon mustard, garlic, salt and pepper
and fresh squeezed lemon if you have it.
This is an easy salad and good on
those hot days.
