I hope everyone had a wonderful Easter, or just a wonderful Sunday. We had a fun-filled weekend. Lots and lots of eating. On Friday we dyed eggs and ate pizza, Saturday we baked cupcakes, and Sunday we tried to go on a morning hike, but the rain decided to bless us with its presence, so instead we met friends for brunch. I made a big, yummy Easter feast for dinner, for the hubby and I. Now time to get back to the healthy eating and cutting out the sweets. I’ve been doing so well, but caved this past weekend. It’s ok, life isn’t fun unless you treat yourself to treats. Ha!

Happy Valentine’s Day!
We started our morning off with lots of kisses and hugs. I got to deliver all of my little treats last night, because the husband said he planned something special for the two of us tonight. So we’ll see what the mister has in order. He always has great surprises!
Yesterday was a full on bake day. With lots of goodies packed up to deliver to our friends. We wanted to let them know how much we love them and appreciate having them in our lives.

Remember Sunday funday? Well this is sorta the same thing, minus drinking. Most of my girlfriends don’t drink, so we find other things fun to do. This last Sunday I baked and had some girlfriends over to help, and eat cookies. I actually ended up baking the cookies the night before, and then frosting them on Sunday. They sure were yummy! We sat around chatted and snacked. I sure do love my girlfriends, they mean the world to me. Thanks girls for being in my life.
The husband and I are pretty much homebodies, but occasionally we venture out. We have certain things that we do and we sort of stick to that pattern. We have always done date night, which I think is very important in a marriage. One of our first dates was eating pho soup. A good friend of mine from the old days introduced me to pho years ago, and I have loved it ever since. So when the husband (at the time boyfriend) asked if I liked pho, almost immediately I knew I found a good partner. (I’m being silly, it wasn’t just pho. Haha). So that was the beginning of our pho dates. If you don’t know, pho soup is a Vietnamese dish consisting of broth, noodles made from rice, a few herbs, and meat. And it’s amazing! Sometimes on our dates we have friends join. Last night we brought our good friend Stephanie along. She had never tried pho, and I think we got her hooked. After we decided to try a little gelato place we saw on our walk to dinner. Yum, Yum, Yum, is all I can say. If you’re local (Santa Barbara), try Spoon, it will not disappoint.
This past weekend was spent with good friends and yummy food. I thought we had a holiday party on Friday night, until I decided to check the invite, and it’s actually this Monday night. (serious ding-bat move). So I double checked the one for Saturday night, and it was indeed on Saturday. I made a few yummy things to take and one of them in particular was a hit. So I wanted to share the recipe, along with some of the photos from our festive weekend. I hope everyone is having a wonderful Christmas season. We have the folks coming in this week, and we are SO excited!!!
Santa Strawberry Hats
1 16oz skim-ricotta cheese
1/2 cup powdered sugar
3 teaspoons vanilla extract
Mix all together. You may want to sweeten the ricotta more or less, depending on your liking. Then slice the strawberries in the middle. Take the top part (pointy side) off and spread ricotta mix on, then place top part back on and dab the top part of the strawberry with ricotta. That’s it! So easy and so cute.
I hope everyone had a great weekend! We sure did over here. It is still raining in Santa Barbara. This is completely unheard of for us, but I have to be honest, I love it! Santa Barbara kicked off their holiday season this past weekend, with the holiday parade on State street.
The husband stayed home to relax after a VERY long work week, and I ventured out with one of my favorite gals, Briana and her little one, Weston. (FYI, if you want professional family portraits or pics of the little ones, she’s your girl) We had a great time, even though the drizzle continued throughout the night. We also stopped by the new French Press coffee shop and warmed ourselves up with a yummy latte. Their new store looks great!
Also, did anyone check out the Neiman Marcus swag at Target? I did. I even bought a couple of items. Such an amazing idea. I love target, and only wish it was a bit closer (I’m pretty sure my husband is glad it’s NOT).
Today was such a strange day. Feelings were high, then low, then high, then low, ok, you get the point. I had to pause and remember all of the things in my life that I am so grateful for. Sometimes we rush through our days and don’t even have a second to think. I’m realizing more and more, that doing just that isn’t healthy. So here ya have it, some simple things that I am grateful for:
My husband, who no matter what loves me unconditionally.
My Family, who I miss dearly.
My Spiritual connection to something bigger and larger than me.
My friends back home (Omaha), who are irreplaceable.
Our cute little home (that we rent).
Today I know that I am loved.

This weekend was such an amazing time with friends. We started at The Palace, for the free breakfast, proceeded up State Street and ended up at Alameda park. We shopped, danced and ate. It was so nice to get out and enjoy what our beautiful city has to offer. What a fun time!
